Like many popular and widely-known recipes, the origin of Chicken Cacciatore belongs to Italy's peasant culture. Typical of Tuscany, Umbria and Lazio, the ingredients are never quite the same from region to region. One thing is sure: the original recipe does not include tomatoes, only chicken, a little wine, some vinegar, garlic and rosemary (the simple ingredients farmers had on hand). During our 90 minute lesson we master the art of authentic pollo alla cacciatora, that is in the hunter's style.
